THINKING of a BBQ – try these CHICKEN SOSATIES

CHICKEN SOSATIES

(See salad idea in next post)

 

3-4 chicken breasts cut into chunks

Marinade:

3 Tbs soy sauce

½ cup white wine

Juice of one lemon

1 clove garlic crushed

1 tsp curry powder

¼ tsp thyme

¼ tsp ground ginger

¼ tsp ground black pepper

Olive oil

Other:

1 medium onion cut into quarters

1 green pepper cut into large pieces

Pineapple chunks

Skewers

 

Mix all the marinade ingredients thoroughly (holding back ¼ of the mixture) and place the chicken chunks into the marinade and leave for 1-2 hours in the fridge.

Remove chicken from the fridge and place on skewers alternating with fat slices of green pepper, onion and pineapple.

Baste with left over marinade and then grill, griddle or pop on the barbeque or braai.

 

Delicious with salads and roast potato wedges.
